Buttermilk and Pure Buttermilk – What’s the Difference?

You can find buttermilk and pure buttermilk on the supermarket shelf. It’s worth taking a close look.

  • A so-called “buttermilk product” (see Milk Products Ordinance) is obtained during butter production. When milk is churned, the liquid is a by-product. This is processed into buttermilk.
  • Nothing is added to pure buttermilk after it has been extracted, neither water nor skimmed or dried milk. In order to increase the milk solids, only water may be removed from the pure buttermilk. This makes pure buttermilk more viscous and it also tastes more intense than buttermilk with additives.
  • If the label only says “buttermilk”, it is a “buttermilk product” that has not been enriched with milk protein products and cream and has not been heat-treated after fermentation.
  • In addition, the manufacturer may add up to ten percent water and up to 15 percent skimmed milk to the “buttermilk”. The manufacturer does not have to indicate this on the packaging.
