Ingredients for 2 servings:

  • 1 butternut squash
  • 4 tbsp olive oil
  • 1 tsp sweet paprika powder
  • ¼ tsp chili powder
  • ½ tsp thyme
  • 3 tbsp gremolata of your choice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Peel the pumpkin, halve it, and remove the seeds. Turn the pumpkin over and make crosswise cuts every two to three millimeters, taking care not to cut through the pumpkin. Then mix all the spices with the olive oil and brush the pumpkin on both sides. Bake in a preheated oven at 200°C (top/bottom heat) for about 50 minutes. To serve, sprinkle the pumpkin with your choice of gremolata. Tip: Gremolata recipes can be found in the database.
