Ingredients for 4 servings:

  • 1 cup olive oil
  • 500 g puff pastry, frozen
  • 500 g spinach, chopped
  • 200 g feta cheese, diced
  • 2 onions, chopped
  • 2 eggs
  • Salt

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Albania

Grease a baking pan with oil and line it with the puff pastry. Arrange the slices so they overlap. Line the edges with puff pastry as well. Season the spinach with salt. Add the cheese, onions, and eggs. Mix everything well and spread the mixture evenly over the dough. Cover with the remaining pastry sheets, leaving a thick rim around the edges. Brush with oil and bake at 220°C for about 45 minutes until golden brown. Serve with buttermilk or whipped yogurt and a green salad.
