Cabbage Soup
The perfect cabbage soup recipe with a picture and simple step-by-step instructions.
- 1 kl. Fresh white cabbage – white cabbage
- 2 Cans Peeled and diced tomatoes
- 2 Pc. Green peppers
- 1 bunch Celery – took half a celery bulb
- 1 Pc. Kohlrabi fresh
- 2 kl. Carrots
- 1 big Onion
- Garlic chopped – if you like
- Water or vegetable stock to pour on
- Olive oil
- Spices:
- Caraway or fennel
- Curry
- Chilli (cayenne pepper) would have been a little hotter
- Ginger – the size of a thumbnail
- Black pepper from the mill
- Chopped parsley
- No SALT
- In a large saucepan, sauté the finely diced onion, add the washed, finely chopped vegetables and the canned tomatoes (if you want to use fresh tomatoes 6-7 peeled and diced) pour water or vegetable stock so that everything is covered
- Approx. Bring to the boil for 20 minutes and continue to simmer until the vegetables are firm to the bite. Then season (NO SALT) if you add the ginger, peel it into small cubes and add it to the vegetables earlier.
- Add fresh herbs only at the end. THE SOUP IS ENOUGH FOR SEVEN DAYS
- For a change, you can also take bok choi (Chinese cabbage), red cabbage, savoy cabbage or other types of cabbage.
