Caipirinha cookies

Ingredients for 1 servings:

  • 300 g flour
  • 2 tsp, leveled baking powder
  • 100 g brown cane sugar
  • 1 packet of vanilla sugar
  • 1 egg(s)
  • 150 g margarine
  • 2 tsp lime zest
  • 100 g powdered sugar
  • 3 tbsp cachaça (alcohol for caipirinha)
  • 2 tbsp lime juice
  • 2 tsp lime zest
  • 1 tbsp brown cane sugar

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

with alcohol, makes about 70 cookies

Mix the flour with the baking powder. Sprinkle the brown sugar, vanilla sugar, egg, chopped lime zest, and cold margarine pieces over the flour. Knead the dough using the dough hook of a hand mixer. Finally, shape it into a smooth ball with your hands and chill for about 30 minutes. Roll out the dough to about ½ cm thick, cut out circles about 5 cm in size, and place them on a baking sheet lined with baking paper. Bake in a preheated oven at 175°C (150°C fan oven) for about 15 minutes until light brown. For the glaze, mix the icing sugar with the cachaça until smooth. Stir in the lime juice and brush the cooled cookies with it. Sprinkle the icing with chopped lime zest and brown sugar.
