delicious in sparkling wine and sparkling water

Pour the water into a saucepan, add the sugar, and set the stove over medium heat. Quarter the limes, squeeze them lightly over the pan, and add them to the pan. Peel the ginger, slice them into thin strips, and add them as well. Bring everything to a boil briefly. Once cooled, strain through a sieve and bottle. If you don’t like the slightly bitter taste of the limes, use only the juice and omit the squeezed limes from the pan. The syrup tastes great in sparkling wine or sparkling water, but also with vanilla ice cream, and will keep in the refrigerator for several months.
