Basis for many recipes

Wash the quinces, peel them with a vegetable peeler, and place them in a pressure cooker. Fill with water up to the minimum mark, close the pot, and cook the quinces on level 2 for about 20 minutes (the ideal cooking time may vary depending on the size and number of quinces). Once cooled, open the pot and remove the quinces with a slotted spoon. The soft quince flesh can now be easily scraped away from the core with a knife or spoon. I briefly boiled the quince purée again in a separate pot and poured it into jam jars while it was still hot. This way, I have small portions on hand for various recipes, such as tarts, cakes, and savory dishes. Quinces are a delicious and healthy fruit. However, many people are hesitant to use them because they are extremely hard when raw. I thought I’d save myself the strenuous task of chopping up the quinces and make a quick and easy unsweetened purée that I can use in a variety of ways.
