Cajun-style tomato chicken

Ingredients for 3 servings:

  • 1 bell pepper(s)
  • 6 tomatoes
  • 250 g leek
  • 1 onion(s)
  • 1 garlic clove(s)
  • 400 g kidney beans
  • 200 g tomato paste, reduced by 3 times
  • 400 g chicken
  • Salt
  • pepper
  • chili powder
  • Paprika powder, hot
  • butter

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

fiery, spicy, simple

Chop the leek, tomatoes, garlic, onion, and bell pepper. Cut the chicken into easily edible pieces. Place these ingredients in a pot and fry briefly in butter, adding a little pepper and salt. Then add enough water to more than cover everything. Add the tomato paste and stir in. Add chili powder to your liking and a pinch of paprika, and simmer on low heat for 45 minutes. Finally, add the kidney beans and simmer for another 15 minutes. Season to taste, and enjoy.
