First, separate the eggs. Beat the egg whites with 30g of sugar until stiff peaks form, then beat the egg yolks with 30g of sugar until frothy. Add the beaten egg whites to the batter, then combine the flour and baking powder, sift them over the mixture, and fold in. Pour the batter into a greased 26cm baking dish and bake in a preheated oven at 180°C for 12-15 minutes. It turns out perfectly, every time!
