Cake: Grandmother’s Cheesecake
The perfect cake: grandmother’s cheesecake recipe with a picture and simple step-by-step instructions.
- 750 g Lowfat quark
- 3 tbsp Lemon juice
- 2 tbsp Raisins
- 250 g Whipped cream
- 3 piece Protein
- 3 piece Egg yolk
- 50 g Cornstarch or pack of vanilla pudding powder
- 75 g Butter
- 1 pinch Salt
- 1 middle Egg
- 1 pack Vanilla sugar
- 225 g Sugar
- 0,5 pack Baking powder
- 150 g Wheat flour
For the dough:
- Mix the wheat flour and baking powder, sift into a mixing bowl. Add 75 g sugar, salt, 1 egg and 75 g butter. Knead the ingredients with the dough hook of the mixer first briefly on the lowest, then on the highest setting, then knead on the work surface to form a smooth dough. For the filling, mix the low-fat quark with 150 g sugar, lemon juice, cornstarch and 3 egg yolks well. Beat the 3 egg whites and whipped cream separately until stiff. Fold both ingredients into the quark mixture. Finally, fold the raisins in the flour into the mixture.
- Roll out 2/3 of the dough on the greased base of the springform pan (28 cm diameter). Knead 1 tablespoon of flour under the rest of the dough, shape into a roll, place it on the dough base as an edge, press against the shape so that an approx. 3 cm high edge is created. Prick the pastry base several times with a fork.
For the filling:
- Mix the low-fat quark with 150 g sugar, lemon juice, cornstarch and 3 egg yolks well. Beat the 3 egg whites and whipped cream separately until stiff. Fold both ingredients into the quark mixture. Finally, fold the raisins in the flour into the mixture. Brush evenly on the floor.
Baking process:
- Put the cake on the wire rack in the preheated oven and bake there at 170 degrees for about 70 minutes.
- After the baking time, leave the cheesecake in the oven for 15 minutes with the oven door open.
