Cake without Baking: Currant, Quark and Yoghurt Slices

  • 250 g Fresh egg waffles (ready-made product)

Covering

  • 1 kg Lowfat quark
  • 750 g Natural yoghurt
  • 250 ml Buttermilk
  • 0,5 Lemon (juice)
  • 4 tsp Bourbon vanilla sugar
  • 2 packet Vanilla sugar
  • 18 leaf Gelatin

  • 1 kg Red currants
  • 2 packet Red cake topping

  • 1 Square springform pan
  1. The square springform pan is laid out with the egg waffles
  2. Soak the gelatine according to the instructions on the package
  3. Mix the quark, yoghurt, buttermilk, lemon juice and sugar well with the hand mixer. Process the gelatine in it according to the instructions on the packet, ideally mix in with a hand mixer so that it is evenly distributed.
  4. As soon as the mixture starts to set, spread almost half of it over the waffles. When the mixture is so that the currants no longer “perish” in it, spread 350g on top.
  5. Pour the rest of the quark and yoghurt mixture over it and distribute the remaining currants evenly on top. Put something into the fridge.
  6. Prepare the cake topping according to the instructions. Take the cake out of the fridge, pour the icing on top and let everything set in the fridge overnight.
  7. Before serving, remove the edge of the springform pan and cut into slices …
