Caliphate Corners
The perfect caliphate corners recipe with a picture and simple step-by-step instructions.
- 250 g Honey
- 100 g Sugar
- 1 tbsp Butter
- 5 g Potash
- 2 tbsp Kirsch
- 400 g Flour
- 0,5 tsp Grated nutmeg
- 1 tsp Ground cloves
- 2 tsp Cinnamon
- 0,5 Lemon zest
- 700 g Marzipan paste
- 1 Egg yolk
- 1 tbsp Cream
- Heat the honey, sugar and butter while stirring and let simmer until it has turned a caramel color and has reduced a little. Remove from heat and stir in 2 tablespoons of warm water. Allow to cool slightly.
- Dissolve the potash in kirsch, have it ready.
- Mix the flour, spices and lemon zest and then add the dissolved potash and honey mixture. Knead everything together thoroughly.
- Immediately roll out the dough into a sheet of approx. 40 x 40 cm and cut into strips approx. 8 cm wide.
- Form 40 cm long rolls with a diameter of 1.5 cm from the marzipan and roll them into the strips of dough. The seam must be at the bottom. Then use 2 rulers or similar to shape the rolls into triangular bars. Whisk the egg yolk with the cream and brush the sticks with it.
- Preheat the oven to 180 °.
- Cut the sticks into 2 cm thick slices and place them on a baking sheet lined with baking paper. Baking time 10 – 15 minutes. They must not get dark.
- The above quantity refers to 5 bars. How many cookies are made depends on how big you cut them. If you think 2 cm too big, you just make it smaller.
- Baked goods can be kept well in a can.
