Ingredients
 

  • 4 slices Whole grain toast
  • 5 Dried tomatoes in oil
  • 3 Spring onions
  • 1 handful Basil leaves
  • 1 Clove of garlic
  • 1 tbsp Capers
  • 50 g Mozzarella
  • Salt and pepper
  • 3 Tomatoes or corresponding cocktail tomatoes
  • Olive oil
  • Basil leaves

Instructions
 

  • Wash tomatoes. Drain the dried tomatoes and cut into strips. Wash the basil, shake dry and also cut into strips. Dice the mozzarella .. Clean the spring onions and cut into rings with the tender green .. Chop the garlic finely.
  • Mix the dried tomatoes, garlic, spring onions and basil with the capers. Salt and pepper. Preheat the oven to 200 ° C (convection).
  • Remove the stem from the tomatoes, cut into thin slices and place on the toast slices like a roof tile. Season with salt and pepper. Now distribute the mozzarella mixture on top. Drizzle with a little olive oil (I also like to use the seasoned oil of the pickled tomatoes) and put everything in the tube on a baking sheet for about 10 minutes.
  • When the toast slices are lightly browned, take them out, cut diagonally and enjoy hot garnished with basil. A beer or a glass of dry red wine goes well with it.
