Calvados steak with apple bacon vegetables

Ingredients for 4 servings:

  • 4 beef fillet(s), steaks
  • 8 tbsp Calvados
  • 1 tbsp honey
  • 100 g bacon
  • 600 g apples
  • 200 g onion(s)
  • 100 ml apple juice
  • 150 g crème fraîche
  • Pepper, from the mill
  • 3 tbsp clarified butter

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Marinate the fillet steaks in Calvados, honey, and pepper and let stand for 1 hour. Fry the bacon in a hot pan. Add the apples and onions, deglaze with apple juice, and sauté for 5 minutes. Fry the fillet steaks in the hot butter for 4 minutes on each side, remove from the pan, and keep warm. Top up the meat juices with crème fraîche. Reduce slightly, then season with the remaining marinade. Serve the sauce with the vegetables over the fillet steaks.
