Can You Freeze Lasagna?

In principle, you can freeze both ready-baked and uncooked lasagne. It is important that the minced meat for the Bolognese sauce is well cooked, otherwise, the other ingredients are harmless. We have more tips here:

  • Make sure that the already baked lasagna is completely cool before freezing it.
  • If you want to freeze your pasta bake in portions, you should also wait until it has cooled down before dividing it, as it will then fall apart less easily.
  • It’s particularly useful if you freeze the lasagne in the casserole dish, for example in a glass or ceramic dish, so you don’t have to transfer the noodle layer casserole to a suitable container before reheating it.
  • Before freezing, seal the casserole dish airtight with several layers of cling film or with a suitable forest-resistant lid.
  • Aluminum containers are not ideal for freezing as they can greatly alter the flavor of the Italian specialty.
  • If you freeze your lasagna, it will keep in your freezer for at least three months.

It is best to let the lasagna gently thaw overnight in the refrigerator before reheating. Frozen or semi-frozen food does not cook evenly, so the worst that can happen is that it will burn on the outside while it is still ice cold on the inside.

Your frozen lasagne will be particularly good if you first cover the baking pan with aluminum foil and remove the foil ten minutes before the end of the baking time. In this way, the defrosted casserole cooks evenly and gets a nice, crispy crust.
