Canarian-style tomato soup with basil strips

Ingredients for 4 servings:

  • 600 g tomatoes, fresh
  • 4 basil leaves
  • 1 onion(s)
  • Salt
  • pepper
  • Sugar
  • 1 tbsp oil (olive oil)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely dice the onion. Wash the fresh tomatoes and chop them roughly. The flowers don’t need to be removed, as the soup will be strained later. Cut the basil into strips. Sauté the onions in olive oil, add the tomatoes, and sauté thoroughly. Add water until the tomatoes are covered. Season with salt, sugar, and white pepper, and bring to a boil. Purée with a hand blender. Strain through a sieve. Garnish the soup with the basil strips.
