Ingredients for 1 servings:

  • 200 g almonds, whole
  • 1 lemon(s), untreated
  • 120 g butter, soft
  • 400 g flour
  • ½ pack of baking powder
  • 2 packets of vanilla sugar
  • 200 g sugar
  • 3 eggs

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Italian almond cookies

Roast the almonds in a dry pan. Grate the lemon zest and mix it with the remaining ingredients (this will make a fairly firm batter). Knead in the almonds. Line two baking sheets with baking paper. Using floured hands, form the mixture into four long, flat strands (approx. 5 cm wide). Bake each sheet at 175°C for 25 minutes. Remove the strands from the sheet and cut them diagonally with an (electric) knife. Place the pieces flat back on the sheet and bake for another 10 minutes. They taste great with cappuccino or tea!
