Ingredients for 1 servings:

  • 75 g capers (jar)
  • 1 bunch of parsley
  • 4 garlic cloves
  • 75 g pine nuts
  • 50 g Parmesan, freshly grated (alternatively Pecorino)
  • 8 tbsp olive oil
  • Pepper, white, from the mill

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

makes approx. 250 ml

First, rinse the capers thoroughly under cold running water and then place them in a sieve to drain. Wash the parsley. Roughly chop the leaves after they’ve dried. Peel the garlic. Finely chop the capers, parsley, garlic, and pine nuts in a blender. Mix in the cheese and 7 tablespoons of olive oil, and season with pepper. Pour the cream into a clean jar, cover with the remaining oil, and seal. Refrigerate until ready to serve.
