Ingredients for 4 servings:
- 8 m.-sized onion(s)
- 3 tbsp powdered sugar
- 1 liter vegetable broth
- Pepper, white
- 250 ml milk (skimmed milk)
- 1 tbsp Gorgonzola
Instructions

Slice the onions into rings, spread them out on a baking sheet, and sprinkle them with powdered sugar using a sieve. Turn the onions slightly so they are coated all over. Place the baking sheet in the oven at 150°C for one and a half to two hours, until the onions are dark brown. Set aside a few particularly attractive rings for decoration. Bring the vegetable stock to a boil, add the onions, and turn off immediately to prevent the soup from continuing to simmer. If any caramelized sugar sticks to the baking sheet, scrape off as much as possible and add it to the hot soup to give it a nice dark brown color. Season with freshly ground white pepper. Heat the skimmed milk with the Gorgonzola until the cheese has dissolved. Whisk the milk vigorously with a hand blender. Ladle the soup into mugs and add a tablespoon of foam to each. Garnish with an onion ring. This soup serves four people as a starter and two people as a main course.
