Caprese à la gourmet with pine nuts, balsamic vinegar and cane sugar

Ingredients for 2 servings:

  • 500 g tomatoes, good, fruity, aromatic
  • 4 tbsp pine nuts
  • 4 packs of mozzarella
  • 2 tbsp cane sugar
  • 1 bunch basil, fresh
  • e.g. olive oil
  • Balsamic vinegar
  • Salt and pepper from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

so it tastes simply perfect.

Toast the pine nuts in a pan and set aside. Cut the tomatoes and mozzarella into thin, or not too thick, slices and arrange them alternately on a plate or in a Caprese bun. Sprinkle the brown sugar and a little salt and pepper over the dish. Drizzle with olive oil and balsamic vinegar. Scatter the toasted pine nuts over the dish. Roughly chop the basil and sprinkle it on top. The brown sugar, along with the balsamic vinegar and pine nuts, gives the dish a special flavor. Serve with delicious ciabatta.
