  • 500 g honeydew melon(s) or watermelon
  • 400 g burrata or buffalo mozzarella
  • 60 g olive oil, good
  • 20 g basil leaves, fresh
  • 15 g pine nuts
  • 1 tsp salt

For the Caprese, combine the oil, basil leaves, pine nuts, and a pinch of salt in a blender. Blend with a hand blender until smooth (light pesto). Cut the melon into large slices, then cut in half, then cut each slice into pieces. Fan the sliced ​​mozzarella and melon pieces onto the plates and toss with the light pesto. Note: Light pesto = because no Parmesan cheese is added.
