- 500 g honeydew melon(s) or watermelon
- 400 g burrata or buffalo mozzarella
- 60 g olive oil, good
- 20 g basil leaves, fresh
- 15 g pine nuts
- 1 tsp salt

For the Caprese, combine the oil, basil leaves, pine nuts, and a pinch of salt in a blender. Blend with a hand blender until smooth (light pesto). Cut the melon into large slices, then cut in half, then cut each slice into pieces. Fan the sliced mozzarella and melon pieces onto the plates and toss with the light pesto. Note: Light pesto = because no Parmesan cheese is added.
