Ingredients for 1 servings:
- 75 g hard candy(s) (caramel).
- 50 g clarified butter
- 50 g flour
- 2 egg whites
- 1 pinch of salt

Crispy rolls as a side dish for dessert
Grind the caramel candies (about 14 pieces) very finely in a food processor. Melt the clarified butter and let it cool to lukewarm. Preheat the oven to 200°C, fan oven 180°C, gas mark 4. Combine the flour and caramelized sugar in a mixing bowl. Stir in the melted clarified butter. Beat the egg whites and salt until light and fluffy, but not stiff, and fold into the batter. Place about 1 teaspoon of batter onto a baking sheet lined with baking paper. Spread it with a pastry brush to form a large circle (about 10 cm in diameter). The baking paper should still be visible through the edges. The thinner the batter, the crispier the rolls will be. Do not bake more than 4 circles at a time, as the dough can only be shaped while hot. Bake in the oven for about 6-8 minutes until golden brown. Remove from the oven and immediately loosen the pastry sheets from the baking paper using a spatula. Wrap each sheet around a wooden spoon to form a small roll. Allow to cool completely and carefully remove the wooden spoon. Makes about 30 pieces. Variation: Make your own caramel and season it with cinnamon, anise, etc.
