Ingredients for 4 servings:
- 4 m.-sized apple
- 4 eggs
- 100 g flour
- 1 pinch of salt
- ¼ liter of milk
- 50 g sugar
- ⅛ liter whipped cream
- 30 g clarified butter
- 1 pinch(s) ground cinnamon
- 30 g walnuts, coarsely chopped
- Powdered sugar, for dusting
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Peel, halve, core, and slice the apples. Separate the eggs. Combine the egg yolks with the flour, salt, and milk, or beat in a mixer, and let stand for 30 minutes. Beat the egg whites until stiff peaks form and gradually add 30g of sugar while continuing to beat. Beat the cream in a second bowl until stiff peaks form and fold it into the batter, loosely and evenly. Heat the clarified butter and the remaining sugar in a large pan and fry the apple slices until golden brown. Season with cinnamon, sprinkle with the walnuts, and toast them as well. Spread the batter over the apples in the pan and fry for 3 to 4 minutes. Then place the pan in a preheated oven at 200°C for a few minutes, until the surface is set. Remove the pan from the oven and flip the pancake using a plate. Return to the oven and finish cooking for 5 to 6 minutes. Tear the pancake into small pieces using two forks, dust with powdered sugar and let it caramelize slightly on the stovetop.
