Caramelized apple pudding with semolina

Ingredients for 6 servings:

  • 2 apples
  • 125 ml still water
  • 2 tbsp sugar
  • 2 packets of vanilla sugar
  • 500 ml whole milk
  • 15 g butter
  • 170 g sugar
  • 70 g semolina
  • 70 g raisins
  • 3 pinches of salt

Instructions

Working time approx. 10 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 15 minutes; Total time approx. 4 hours 25 minutes

no baking, no refrigerator

Dice the apples and cook in water with 2 tablespoons of sugar and 1 packet of vanilla sugar until the water has evaporated and the apples are soft. Caramelize 100g of sugar in a saucepan and spread it in a round dish with a diameter of 20cm. Cook the milk, butter, 70g sugar, semolina, salt, and 1 packet of vanilla sugar until stiff. Stir in the raisins and apples. Immediately pour the still-hot cream onto the caramel and wait until the pudding has cooled enough to stand upright. Depending on the temperature, this can take 3 to 5 hours. Invert the pudding onto a serving platter. The platter should have a slight edge to allow for the partially melted caramel.
