Caramelized braised cucumbers

Ingredients for 4 servings:

  • 2 braised cucumbers or salad cucumbers
  • ½ bunch of dill
  • 2 tsp mustard, grainy
  • 2 tbsp crème fraîche
  • 1 tbsp butter
  • 3 tbsp vinegar (wine vinegar)
  • 1 tbsp sugar
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the cucumbers, halve them lengthwise, and scoop out the seeds with a spoon. Cut the cucumbers into 1 cm thin slices, place them on a cloth, and lightly salt them. After 20 minutes, squeeze out the water with the cloth. Melt the sugar in a hot pan, stir in the butter. Stir the dried cucumbers into the caramel and coat with it. Season with pepper and a little salt, and add the vinegar. Cover and simmer the cucumbers over low heat for 5 minutes. Stir in the dill, crème fraîche, and mustard, and the braised cucumbers are ready.
