Caramelized carrots

Ingredients for 4 servings:

  • 700 g carrot(s)
  • 1 tsp ginger, freshly grated, possibly less
  • 2 tbsp sugar (heaped)
  • 80 g butter
  • some water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash, peel, and slice the carrots diagonally. Grate the ginger. In a saucepan, caramelize the butter and sugar while stirring. Pour in about a fingertip’s worth of water, add the ginger (it really brings out the carrot flavor!), and stir to dissolve the caramel. Add the carrots to the pan and cook over low heat until the liquid has evaporated and the carrots are covered with a shiny coating. If the carrots are still hard, add a tiny bit more liquid and continue as directed until the carrots are tender. If they are already tender before the liquid is gone, cover the pan and turn on the power to speed things up.
