Ingredients for 4 servings:
- 2 mangoes
- 2 balls of mozzarella
- 2 stalks of lemongrass
- 2 chili peppers
- 1 tsp lime zest, grated
- 2 limes, squeezed
- 2 tbsp cane sugar or palm sugar
- 2 tbsp olive oil
- 2 tbsp coriander leaves, fresh

Peel the mangoes, halve them, and slice them. Halve the mozzarella balls and slice them as well. Arrange the mango and mozzarella on plates in a shingle pattern. For the dressing, finely chop the lemongrass, deseed the chili peppers, and slice them into rings. Then, blend the lime zest, lime juice, sugar, lemongrass, and chili with the olive oil. Pour the dressing over the plates and garnish with coriander leaves.
