Caramelized chicory

Ingredients for 2 servings:

  • 4 chicory
  • 2 tsp sugar
  • 2 tbsp lemon juice
  • 2 tbsp soy sauce
  • 4 tbsp cream
  • 1 tbsp butter
  • some salt and pepper

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

quick, cheap and delicious as a starter or side dish

Halve the chicory and remove the stalk without breaking the halves. Melt the butter in a pan. As soon as it starts to bubble, place the chicory halves cut-side down in the pan. They need to brown (this takes about 7 minutes), then turn them over. Sprinkle salt, pepper, about 1 teaspoon of sugar, and about 1 tablespoon of lemon juice evenly over them. Turn them over and add another 1 teaspoon of sugar and lemon juice. Cook for another 10 minutes. Finally, add the soy sauce and cream (taste to see if you need more or less), turn off the oven, cover, and let stand for 10 minutes. Serve with rice, potatoes, or pasta. You can also add balsamic vinegar to create a magical accompaniment; it’s all a matter of taste. For two people, we only had rice with it.
