Ingredients for 4 servings:
- 1 kg potatoes
- 100 g tomatoes, dried
- 3 sprigs of marjoram
- 3 sprigs of thyme
- 3 cloves garlic
- 1 small chili pepper(s)
- 50 g butter
- 6 tbsp oil
- 1 tbsp sugar
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Dice the potatoes. Cover and fry in a pan with oil until tender. Reduce the heat and add the tomatoes, marjoram, thyme, garlic, chili, and butter. Toss the potatoes with the spices and fry for 3-4 minutes. Sprinkle with the sugar, stir, and fry for another 1-2 minutes until caramelized. Season with salt and pepper. This dish pairs well with roast lamb.
