Glass noodle salad with peppers and chicken

Ingredients for 4 servings:

  • 150 g glass noodles
  • 1 bell pepper(s), red
  • 1 bell pepper(s), green
  • 300 g chicken breasts
  • 2 onions
  • 3 carrots
  • 2 cloves garlic
  • salt and pepper
  • 1 dash of soy sauce
  • 1 dash of oyster sauce
  • Piri-Piri
  • Spice(s), (Asian)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

First, cook the noodles according to the package instructions and drain well. Cut the chicken fillet into small cubes. Slice the peppers and onions. Grate the carrots. Then fry the meat cubes in olive oil. Remove from the pan and set aside. Add the peppers and onions to the pan and sauté until al dente. Add the carrots and sauté briefly. Crush the garlic. Place the glass noodles in a bowl and break them up a little with scissors. Add the vegetables and toss to combine. Season the salad with salt, pepper, soy sauce, oyster sauce, Asian spice, and piri-piri.
