Bring the water and sugar to a boil. Meanwhile, remove the small seeds from their shells, crush them slightly with a mortar, and add them to the sugar water. Simmer everything together until the liquid becomes syrupy. Then let it cool slightly, then strain through a filter paper, for example. This might also work with a kitchen towel. Pour into very clean bottles. This syrup tastes delicious in espresso and can also be used in baking.
