Caribbean banana bread or banana cake

Ingredients for 6 servings:

  • 500 g banana(s), very ripe, weighed with peel (take less rather than more!)
  • 140 g margarine
  • 120 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 2 eggs
  • 300 g flour
  • 1 sachet of baking powder, sifted together with the flour
  • 1 pinch(s) nutmeg, freshly grated
  • ½ tsp cinnamon powder
  • 1 tbsp rum

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

great for consuming very ripe bananas

Puree the bananas. Beat the margarine with salt, sugar, and vanilla sugar with a hand mixer or in a food processor until fluffy. Beat in the eggs, one at a time. Gradually add the banana puree, flour with baking powder, spices, and rum. Pour the batter into a greased loaf pan or ring pan. Bake in a preheated oven at 180°C (top/bottom heat) for about 60 minutes on the middle rack.
