Caribbean banana ketchup in the Thermomix

Ingredients for 1 servings:

  • 2 m.-sized banana(s)
  • 1 tbsp oil
  • 1 onion(s)
  • 2 garlic cloves
  • 1 red chili pepper(s)
  • 3 tbsp tomato paste
  • 60 ml red wine vinegar or balsamic vinegar
  • 3 tbsp brown sugar
  • 3 cloves
  • 2 bay leaves
  • ½ tsp salt
  • Soy sauce

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Chop the bananas, chili, onions, and garlic in the Thermomix for 7 seconds on speed 5. Add the sugar and oil, then fry for 7 minutes on speed 2.5/120°C. Add the remaining ingredients and simmer for 18 minutes on speed 2/100°C. Place the simmering basket on top to prevent splashing. Remove the bay leaves. When the mixture has the desired consistency, fill it with liquid; otherwise, simmer for another 10-15 minutes on speed 2/100°C. Pour the ketchup into clean jars and seal them immediately. I added a little spicy curry powder, as we like our food very spicy. This is exactly the ketchup we were served in the Caribbean.
