Carob flour cookies

Ingredients for 1 servings:

  • 250 g wheat flour
  • 200 g carob flour
  • 100 g sugar
  • 250 g butter
  • 3 tbsp, levelled cocoa
  • ½ pack of baking powder
  • 1 packet of vanilla sugar
  • 3 eggs
  • Orange peel or orange peel flavoring
  • ½ cup chocolate chips or coarsely chopped chocolate
  • ½ cup candied orange peel, chopped, optional if desired

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 30 minutes

Tea biscuits, chocolate biscuits

Mix together the two flours, baking powder, cocoa, and orange zest and make a well in the center. Cut the butter into small cubes and spread it around the edge. Sprinkle with sugar and vanilla sugar, crack the eggs into the well, and quickly knead everything into a smooth dough. When the dough is smooth, add the chocolate and, if desired, the candied orange peel. Knead well again and form into a ball. Wrap the dough ball in foil and let it rest in the refrigerator for 1 hour. Preheat the oven to 180°C. Form the dough into walnut-sized balls and place them on a baking sheet lined with baking paper. Make sure the balls are spaced slightly apart, as they will expand during baking. Bake the balls on the middle shelf for 10 minutes. They make a wonderful snack with tea or coffee. This batch makes about 50-60 cookies.
