Carrot and apple salad with orange dressing

Ingredients for 2 servings:

  • 40 g almond sticks
  • 4 m.-sized carrot(s)
  • 2 large apples
  • 3 tbsp oil (safflower oil)
  • ½ lemon(s), juice and some zest
  • 2 oranges or blood oranges
  • 1 pinch(s) of raw cane sugar
  • Sea salt
  • Pepper, white

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Roast the almond slivers. Wash and grate the carrots and apples. Peel the carrots first, if necessary. Halve and juice the lemon, rubbing off some of the zest. Juice the oranges. In a bowl, combine the orange dressing with all the listed ingredients. Season to taste. Pour the dressing over the grated carrot and apple mixture and mix well. Let it sit for a while, covering the salad. Season again before serving and arrange the roasted almond slivers on top of the salad.
