Carrot and Leek Tart

- 1 Flammkuchenteig
- 500 g Leek
- 5 Carrots
- 0,5 bunch Parsely
- 1 tbsp Sugar
- 5 tbsp Vegetable broth
- 100 g Cream
- 5 tbsp Milk
- 100 g Grated mozzarella
- 2 Eggs
- 100 g Bacon
- Peel the carrots and cut into slices like the leek. Heat 2 tablespoons of butter in a pan. Braise the carrots in it. Sprinkle with sugar, toss. Deglaze with broth, approx. 5min. continue to steam. Stir in the leek and parsley and let cool.
- Place the tarte flambée dough in a tart pan and top with the ham slices. Spread the vegetables on top.
- Whisk eggs, cream and milk together and season well with nutmeg. Scatter cheese on top. In a preheated oven at 200 degrees for about 40 minutes. to bake.
