Carrot and Orange Muffins

The perfect carrot and orange muffins recipe with a picture and simple step-by-step instructions.

muffins

  • 120 g Butter
  • 120 g Brown raw cane sugar
  • 1 Organic orange
  • 2 Eggs
  • 180 g Carrots
  • 60 g Walnuts
  • 120 g Flour
  • 1 tsp Tartar baking powder
  • 1 pinch Sea-Salt

Topping

  • 250 g Mascarpone
  • 4 tbsp Powdered sugar
  • 1 Organic orange
  1. First, preheat the oven to 180 ° C top / bottom heat.

Preparations:

  1. Remove the peel of the orange with the zest and then remove the juice from it. Finely grate the carrots, place in a kitchen towel and squeeze out the juice. We don’t need this. Roughly chop the walnuts.

Muffins:

  1. Using the mixer, beat the butter, sugar and orange zest in a bowl until frothy. Then add the two eggs. Now mix in the carrots and walnuts. Add the orange juice and stir everything.
  2. Mix the flour with the baking powder and the pinch of salt and also add.
  3. Pour the mixture into the paper cases and bake for about 25 minutes.

Topping:

  1. Use the zester again: o)
  2. Mix the mascarpone and powdered sugar and then add the orange zest.
  3. Put the mascarpone mixture in the refrigerator until the muffins have cooled down.
