Carrot and potato soup

Ingredients for 2 servings:

  • 1 bunch of carrots
  • 1 large potato(s)
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 handful of fresh herbs (parsley, marjoram, etc.)
  • some ginger, sliced
  • 1 tbsp, levelled honey
  • salt and pepper
  • 1 liter of broth
  • 1 tbsp crème fraîche
  • n. B. Croutons
  • some butter
  • 2 slice(s) Baguette(s) , fresh
  • Herbs, for sprinkling

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Roughly dice the onion and garlic and sauté in butter. Peel and slice the carrots, peel and dice the potatoes, and add them. Season with salt and pepper. Deglaze with 1 liter of broth. Simmer until the vegetables are tender. Add some fresh ginger, honey, and herbs. Blend with a hand blender. Season to taste, then serve on plates, garnished with herbs, croutons, and a dollop of crème fraîche.
