Ingredients for 1 servings:

  • 260 g flour
  • ½ tsp baking powder
  • 1 tsp baking soda
  • 60 g walnuts, chopped
  • 40 g desiccated coconut
  • 60 g raisins
  • 120 g apple, finely chopped
  • 1 egg(s)
  • 140 g sugar
  • 80 ml vegetable oil
  • 1 tsp flavoring (vanilla)
  • 240 g buttermilk
  • 200 g carrot(s), finely grated
  • ½ tsp cinnamon

Crack the egg in a bowl and whisk lightly. Then add the sugar, oil, flavoring, buttermilk, and carrots and mix well. Carefully combine the flour, baking powder, baking soda, cinnamon, walnuts, desiccated coconut, and apple pieces in another bowl. Add the dry ingredients to the wet ingredients and mix everything together. Pour the batter into a prepared muffin tin. Bake in a preheated oven at 180°C for about 20-25 minutes until golden brown.
