Ingredients for 1 servings:

  • 200 g sugar
  • 4 egg yolks
  • 250 g carrot(s), finely grated
  • 250 g hazelnuts, ground
  • 2 tbsp cornstarch
  • 1 packet of baking powder
  • 4 egg whites, beaten to snow
  • 3 tbsp water, cold
  • Margarine, for greasing
  • Flour, for dusting
  • Powdered sugar, for decoration
  • Marzipan or icing carrots for decoration

Working time approx. 30 minutes; Total time approx. 30 minutes

Whisk the sugar and egg yolks together thoroughly. Add the carrots, hazelnuts, cornstarch, and baking powder and slowly whisk everything together. Now stir in the beaten egg whites and water. Grease a loaf pan thoroughly with margarine and dust with flour. Pour in the batter. Bake the cake in a preheated oven at 180°C for 60 minutes. After baking, let it cool on a wire rack and dust with powdered sugar. Decorate with marzipan or icing carrots, if desired.
