Carrot cake without sugar

Ingredients for 4 servings:

  • 200 g flour, whole grain
  • 150 g carrot(s), grated
  • 1 tsp baking powder
  • 1 tsp cinnamon powder
  • 20 dried dates, pitted
  • Water for soaking
  • 2 eggs
  • 60 g butter
  • 150 ml milk or orange juice
  • possibly grease for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Grease a baking pan or line it with parchment paper and set aside. Soak the dates in water for 15-20 minutes. Mix all dry ingredients and set aside. Combine the eggs, butter, milk or orange juice, and dates. Blend with an immersion blender until the dates are relatively small. Mix thoroughly with the dry ingredients and pour into the pan. Bake at 180°C for about one hour. Don’t forget to do the toothpick test!
