Ingredients for 1 servings:
- 500 g carrot(s), young, tender
- 750 g sugar, not gelling sugar
- 2 lemons, organic

Working time approx. 20 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 20 minutes
Peel and finely grate the carrots, including the peel. Mix with the juice of 2 organic lemons and the zest of 1 organic lemon. Layer the mixture with the sugar in a saucepan, with the sugar being the last layer. Cover everything with water and simmer over low heat for 3 hours. Now test for setting. When the setting point is reached, pour into hot jars and seal with hot, boiled lids.
