Carrot noodles "Caroodels" with peas

Ingredients for 2 servings:

  • 5 m.-sized carrot(s)
  • 1 onion(s)
  • 300 g peas, frozen, thawed
  • 1 cup sour cream (not thick!)
  • 1 tbsp red curry paste
  • 1 tbsp curry powder
  • Salt
  • e.g. Cheddar cheese
  • Coconut oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

First, peel the carrots and spiralize them into carrot noodles. Finely chop the onion. Add the coconut oil to a wok and sauté the onions until translucent. Add the carrots and sauté. Cook in the wok for about 5 minutes, stirring occasionally. Add the thawed frozen peas. Now add the curry powder and curry paste and stir in. Season with salt. Finally, stir in the sour cream. Sprinkle with grated cheddar cheese before serving, if desired.
