Carrot Noodles with Soy Bolognese
The perfect carrot noodles with soy bolognese recipe with a picture and simple step-by-step instructions.
- 500 g Carrots
- 75 g Soy granules dry
- 150 ml Vegetable broth hot
- 1 Onion
- 1 Clove of garlic
- 500 g Tomatoes happened
- 2 tbsp Tomato paste
- Oregano
- Basil leaves
- 1 shot Balsamic vinegar
- Some water
- 0,5 Red chilli pepper
- Salt and pepper
- Let the soy granules soak in the hot broth. In the meantime, peel the carrots in “noodles” with the peeler. Chop up the last, unpeelable residue.
- Finely chop the onion, garlic and chilli as well.
- Pour off the soy granules and squeeze out well. Fry in a little olive oil until it turns golden. Then add the chopped vegetables and roast them. Stir in the tomato paste and add the tomato puree.
- Add some water, a dash of balsamic vinegar and salt / pepper / oregano.
- Approx. Let simmer gently for 20 minutes.
- Bring the water to the boil and add the carrot noodles. Cook for approx. 3-5 minutes.
- Chop the basil and mix into the sauce.
