Carrot and Zucchini Pot with Loop Noodles

Ingredients
 

  • 2 tbsp Oil
  • 250 g Carrots
  • 250 g Zucchini
  • 2 Onions
  • 200 g Cream cheese with herbs
  • 200 g Boiled ham
  • 500 ml Vegetable broth
  • 3 Garlic cloves
  • 500 g Grinding pasta
  • Salt pepper

Instructions
 

  • Cut the zucchinis and carrots into fine strips. Dice the ham and quarter the onions and cut into strips. Finely grate the garlic.
  • Cook the loops of pasta in salted water.
  • Let the oil get hot in a saucepan. Put the carrots in the hot oil and fry for 2 minutes, add the onions and fry for another 2 minutes. Add the zucchinis and fry briefly.
  • Add salt, pepper and deglaze with the vegetable stock. Add the processed cheese and let everything simmer gently. The vegetables should still be slightly bite. Add the garlic and the boiled ham, season to taste again and, if necessary, thicken a little.
  • Add the cooked pasta to the sauce and serve immediately.
