Vegan: Carrot Bolognese with Spaghetti

Ingredients
 

  • 4 medium sized Grated carrots
  • 1 medium sized Chopped onion
  • 20 g Vegan butter
  • 20 g My vegetable broth *
  • 1 packet Sieved tomatoes
  • Pepper
  • 1 pinch Stevia
  • 1 pinch Lemon juice

Instructions
 

  • Peel the carrots, chop them roughly and chop them very finely in the blender.
  • Heat the fat in a pan and first sweat the onions in it, then add the chopped carrots and sear everything well.
  • Then add some of the vegetable stock. Now add the tomatoes, a little water and stir everything well and bring to a simmer. The whole thing should then simmer for a few minutes.
  • By the way, the spaghetti can be cooked ... then just serve 🙂
