Carrot or corn fritters

Ingredients for 4 servings:

  • 3 eggs
  • 600 g carrot(s) or 1 can corn kernels
  • 40 g flour (whole wheat flour)
  • 2 pinches of salt
  • 1 pinch(s) of pepper
  • 5 sprigs of parsley
  • some oil for frying

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and grate the carrots. Drain the corn. Mix with the remaining ingredients. Fry the pancakes in oil. Let them sizzle in a pan until browned on both sides. Serve with herb curd and salad.
