Ingredients for 2 servings:

  • 10 tbsp flour
  • 1 can of corn
  • 1 bell pepper(s), red
  • 3 spring onions
  • 3 eggs
  • 1 chili pepper(s), mild
  • 1 clove(s) garlic
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Chop the vegetables and combine them with all the other ingredients in a large bowl until smooth. Heat oil in a shallow pan over medium heat and gently fry the pancake mixture. Serve with yogurt dip or barbecue sauce.
