Ingredients for 4 servings:

  • 5 m.-sized carrot(s)
  • 2 m.-sized apples
  • 5 tbsp vinegar (e.g. Altmeister)
  • 4 tbsp orange juice
  • 2 tsp lemon juice
  • 2 tsp salt
  • 2 tsp sugar
  • 2 tsp mustard, medium hot
  • 4 tsp herbs, frozen 8-herb
  • 1 pinch(s) of pepper

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

simply with tasty dressing

Grate the carrots and apples and set aside. Combine the vinegar, orange juice, lemon juice, salt, sugar, mustard, herbs, and pepper in a small mixing bowl and stir well. Then toss the carrots and apples with the dressing. Let stand for at least 1-2 hours before serving. I often make the salad the night before and let it stand overnight; that’s when it tastes best. If you don’t want as much apple, you can use just 1 apple for 5 carrots. I find 2 apples provide the perfect balance.
