Carrot salad with yogurt

Ingredients for 4 servings:

  • 1 kg carrot(s)
  • 700 g yogurt, solid, 10% fat content, available in Turkish grocery stores
  • ½ tsp salt
  • 3 cloves garlic
  • 6 tbsp olive oil
  • ½ tsp Pul Biber (leaf peppers)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

This is a super simple recipe that tastes light and delicious thanks to the yogurt.

Peel and grate the carrots, fry them with salt and 4 tablespoons of olive oil for about five minutes, and let them cool. Crush the garlic and mix it with the yogurt. Add the cooled carrots, mix everything together, and place on a serving plate. Sprinkle with paprika and drizzle with about 3 tablespoons of olive oil. Have fun trying it out.
